The technical reason is that the condition of their licence to operate a motorway service station is that it must offer hot meals and fuel 24/7 365 days a year.  So if you need Cumberland sausage and chips at 2AM Christmas day then you know where to go :-)

But we all know that franchises all up prices for the services even for the non 24 hour shops on site :-(
